When thinking about curry, a dark exotic Indian restaurant comes to mind. The kind that serves naan bread and onion bhajees and the windows are dressed in jewel toned saris with the latest Bollywood music playing in the background. However, before you drive half an hour to your favorite curry house, check out this very easy fifteen-minute chicken curry recipe that will leave you satisfied and quell the curry cravings. This is by far the easiest weak night meal that is also sure to impress your friends.
1 tablespoon oil
1 yellow onion sliced
3–4 tsp curry powder
3/4 heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
1 can diced tomatoes drained
One rotisserie chicken (shred the white meat)
2 cups cooked jasmine or basmati rice
Heat oil and fry onion. Sprinkle curry and simmer. Add cream/yogurt and simmer an additional couple of minutes. Then, add tomatoes, salt and pepper. Simmer until bubbly. Add chicken until heated throughout. Serve in bowls over the rice.
