I am a true Texas Cowgirl and love my Lone Star State more than life itself. Recently I moved to South Carolina to take care of my Daddy. The adjustment hasnt been easy, the Southern Belles here have been set back on their spiked heels by this cowgirl boot wearing, grease covered Texas tornado who bears no apologies! Those who meet me for the first time remark on how "course" I am. I make no apologies for my entusiasm or my energy, my intelligence, or my frankness when I speak to you. Those who get to know me well see that inside this Texas tornado is a very quiet, loving person who simply wants to be accepted, to be loved. They know that my prickly outer shell is just a protection for me, a way to prevent those who try to hurt me from getting to my heart.
I write because it is my release. I tell people that I write therefore I am. I bear my soul and this website allows me to bear it without the backlash of those people who know me yet cannot accept me. My name is in honor of a Grandmother and a Great Aunt I loved dearly but lost too soon to cancer. My last name is from my favorite movie, Gone With the Wind. Scarlett OHara is really me to the T. She was fierce, independant, progressive ahead of her time and she was misunderstood by everyone. What she loved she pushed away for fear of hurt, of rejection, fear of poverty. I have read the sequels to Gone with the Wind and love them equally because each one explores a facet of the main character's personality from a unique point of view. I wonder if someday when I write my life story will it read like a Johnny and June love story or a Rhett and Scarlett love story?

This is quick, easy and my kid’s favorite meal! It was my grandmother’s recipe and can be adjusted to make as little or as much as you...
